Vibrant Greek lemon rice that tastes like summer vacation! Zesty lemon, fresh herbs, and fluffy rice create the perfect sunny side dish for any meal.
Rinse the rice under cold water until the water runs clear. This removes excess starch and ensures fluffy rice.
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Add the minced garlic and cook for another minute until fragrant.
Stir in the rice and cook for 2-3 minutes, stirring constantly, until the rice is lightly toasted.
Pour in the vegetable broth, lemon juice, and lemon zest. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes.
Remove from heat and let the rice sit, covered, for 5 minutes. Then fluff with a fork.
Stir in the fresh dill, parsley, and oregano. Season with salt and pepper to taste.
Serve warm with extra lemon wedges on the side for squeezing over individual portions.
