Rinse the rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.
Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
Add minced garlic and cook for another minute until fragrant. Stir in the dried oregano, salt, and pepper.
Add the rinsed rice to the pan and stir to coat with the oil and seasonings. Toast for 1-2 minutes until the rice becomes slightly translucent around the edges.
Pour in the vegetable broth and lemon juice. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until the liquid is absorbed and the rice is tender.
Remove from heat and let stand covered for 5 minutes. Then fluff with a fork and stir in the fresh dill, parsley, and lemon zest.
Taste and adjust seasoning if needed. Serve warm with extra lemon wedges on the side.
