In a large mixing bowl, combine the ground turkey, grated onion, minced garlic, Worcestershire sauce, and Dijon mustard. Mix gently with your hands or a fork until just combined.
Add the beaten egg, breadcrumbs, smoked paprika, oregano, salt, and pepper. Mix gently until all ingredients are incorporated. Be careful not to overmix, as this can make the patties tough.
Divide the mixture into 4 equal portions. Gently form each portion into a patty about 3/4-inch thick. Use your thumb to make a slight indentation in the center of each patty – this helps them cook evenly and prevents them from puffing up.
Heat olive oil in a skillet or grill pan over medium heat. Cook the patties for 5-6 minutes per side, or until they reach an internal temperature of 165°F. For outdoor grilling, cook over medium heat for the same time.
Let the patties rest for 3-4 minutes before serving. This allows the juices to redistribute throughout the meat, ensuring maximum flavor and tenderness.
