In a large mixing bowl, combine the ground turkey, panko breadcrumbs, mayonnaise, Dijon mustard, grated onion, minced garlic, Worcestershire sauce, smoked paprika, salt, and pepper. Mix gently with your hands until just combined – be careful not to overmix.
Divide the mixture into 4 equal portions and shape into patties about ¾-inch thick. Use your thumb to make a slight indentation in the center of each patty – this helps them cook evenly and prevents puffing.
